Pumpkin Seed Pesto

An alternative to your classic pesto, replacing pine nuts with pumpkin seeds for an extra earthy flavour. You can also add parmesan cheese to this mix but I didn’t because I find it lasts longer in the fridge.

Add to pasta, scrambled eggs, a slice of bread or give gift to a food loving friend.

Serves: 1 Jar Prep Time: 15 mins

 
 
 

Ingredients:

- 2 bunches basil (roughly 120g picked leaves)

- 4-6 small cloves garlic

- 100g pumpkin seeds

- Olive oil

- Salt and pepper to taste

Method:

  1. Add all ingredients except olive oil to a food processor, blender or stick blender and whizz.

  2. While blending, slowly pour in olive oil until it reaches a consistency that you like (drier for spreading or more oily for sauces).
