Banana Bread with Cream Cheese Icing
I feel like I could pick my mum's banana bread out of a lineup, but I couldn’t tell you why. It’s one of those things we’ve all watched someone make, everyone with their own tweak or special addition. I piped the icing on because I felt like being fancy, but you can just lather it on thick with a spatula, or you can be fancy too.
Serves: 8-10 portions Prep Time: 10 mins Cook Time: 50 mins
Ingredients:
Banana Bread
- 2 overripe bananas
- 170g butter (soft)
- 170g caster sugar
- 1/4 tsp vanilla
- 170g self-raising flour
- 1/2 tsp cinnamon
(Pour into lined bread tin. Bake at 180 for 50 mins. After cooling, get ready to ice)
Cream cheese icing:
- 90g cream cheese (room temp)
- 110g butter (soft)
- 1/2 tsp vanilla
- 240g icing sugar
(Combine until soft and worked together)
Method:
In a mixing bowl, combine bananas, butter, sugar and vanilla and mix well.
Add self-raising flour and cinnamon and mix until all flour is incorporated
Pour into a lined bread tin.
Bake at 180 degrees for 50 minutes or until a knife comes out clean
Set to cool before icing.
Combine all icing ingredients in a bowl and mix well.
Pipe on or lather with a spatula.
